Oregon Culinary Institute can help you fast track your career with a minimum 32-week culinary diploma or minimum 62-week associate’s degree. Both programs allow you to build a strong culinary foundation, and the associate’s degree implements an additional 30 weeks to offer business and general education courses. These courses will assist you in becoming a restaurant manager or owner while still possessing exceptional culinary abilities.
New classes begin every 8 weeks to add convenience and flexibility to your schedule. You will begin your learning with the basics. This includes topics such as sanitation, and cooking methods and techniques. From this you will work into basic and intermediate cuisine. This is where you will learn to prepare a meal right from appetizers to desserts. You will then move to an advanced level, learning about topics such as cost control and menu development; at this level you should be able to bring all elements of the front and back house together.
The culinary arts program consists of 24-weeks in the kitchens and classrooms and 360-hours in an on-the-job externship where you will work within one of the exceptional restaurants located in Portland.
