Cuisine Diplome

In the intermediate level of Le Cordon Bleu training, you will get a taste of regional French cuisine. You will explore the areas of product origins, presentation, flavor adaptation, and advanced culinary techniques. Once your culinary skills are established, you will be ready to move to the superior level.
In the superior level, you will attain experience with full menus and luxury ingredients. This is where you can truly let your culinary creativity soar, as you have mastered your palate and established a strong foundation. You will prepare exquisite three-course meals. You will also prepare an original dish from a “mystery basket.” This is a basket filled with a variety of ingredients; you will need to use each and every one to create a luxury meal that would impress Emeril himself!
Patisserie Diplome
Many of the Le Cordon Bleu schools refer to the Patisserie Diplome as Baking and Pastry Arts. It works through the same three levels as seen with the Cuisine Diplome. At the basic level, you will learn about dough, filling, decorating, and traditional desserts and cakes. When you move into intermediate, you will focus more on presentation and decoration. You explore the areas of miniaturization, chocolate, caramel, and classic and contemporary presentations.
You will work your way up to superior, the most creative level. This is where you become familiar with dessert menus, pulled sugar, blown sugar, pastillage, and hand-dipped and molded chocolates. You can create baking and pastry masterpieces that will make jaws drop; pieces that you thought you would only see on TV food channels!
